In fact, as we write, the space with entrance in via della Stelletta – the same as Retrobottega which, we remember, in addition to being one of the most stimulating and fun gastronomic experiences on the Roman and Italian square in general is a continually evolving project that has colonized the entire block over the years – it is closed to the public. Inside there is a construction site. «For now the laboratory continues to work but only for Retrobottega and to supply some other restaurants. We are still evaluating what to do with the space, also in view of the Jubilee.”
Nearby – the most central center of Rome, behind it is Via della Scrofa and a stone’s throw away Piazza delle Coppelle – it would not be more convenient to invest in fresh pasta, even cooked take-away pasta. «
It has become a difficult sector with ruthless competition on price”, continues Lo Iudice. Which specifies: «The laboratory obviously remains, also for the bread (sourdough and super-selected organic flours, ed), we continue to do everything at home. But we still have to decide what will become of the shop.” The rumors speak of an investment in takeaway street food (always thinking about the flows expected for the Jubilee). It could become a “designer” kebab shop like a hamburger shop, always according to the premises of the house, where many ingenious ideas also emerge on the food front vegetable.
