Double gold at the World Pizza Championship: the triumph of Giulia and Giulia from Castelli Calepio

In April 2023 they had already won the title of “best sustainable pizza” at the World Pizza Championship, but this year they did even more. Yesterday, April 11, in the 2024 edition of the competition, Giulia Vicinia budding pizza chef who works in the family restaurant Giuly Pizza in Castelli Calepio, and her great friend Giulia Zanni they won the titles of “Best classic pizza” and “Pizzaiolo for change”.

The pizza they brought to the World Cup (and which won both titles) is not just a pizza, but a real «project of synergy between creatives and producers». Zanni tells it: «It’s called “Spontanea”, because it was born naturally from our explosion of energy». An immediate pizza therefore, in which however a broad and important message can be read.

Ingredients and ideas

“Spontanea” is in fact a vegan pizza, made with ancient grain flour dough and which has only fermented vegetables as ingredients, i.e. vegetables “cooked” through a technique that uses neither heat nor electricity and preserves their properties even better .

«To replace the protein part, the one usually represented by mozzarella, we used a chickpea flour – continues Giulia -. However, a Bergamo touch could not be missing, given that we also included polenta chips in the composition.” The ingredients include yam (American sweet potato), fermented radishes, fermented onions, nettles self-harvested mountain flowers and rosemary flowers.

Not only that, the two girls thought of everything, even the presentation. «Giulia’s partner created, in collaboration with a local artist, a walnut wood cutting board. It was material that would have been thrown away if she hadn’t found new life in this way – adds Zanni -. Everything was then accompanied by an organic and biodynamic wine from Franciacorta.”

«We are on the right path»

Giulia comments on the victory: «Having earned two first places is confirmation for us that we are on the right path. Our goal is to ube pizza as a container of values ​​in which we believe and which represent us: beauty, sharing, sensitivity, organic, respect for the environment, valorisation of tradition and the past”. An aspiring artist, Giulia, a chemistry student, the two young people full of energy and emotions were able to combine their qualities and aspirations in a single dish. And the result was recognized internationally.
