OLBIA. The Gallura soup arrived in the school canteens of nursery and primary schools in Olbia to the amazement of many children who for the first time tasted the symbol par excellence of traditional Gallura cuisine.

Strictly zero kilometer products, “fresa” (spianata) from Pattada, sheep and beef broth from the south of the island, peretta from Olbia and the inevitable mint, the historic Solaria cooperative has prepared well 4 thousand portions for the entire week to be distributed to the city’s young students.

The “Gallura soup day” was promoted by the Culture Department of the municipality of Olbia, led by Sabrina Serra. “With this initiative we want to introduce children to our traditions – declares the deputy mayor -. An opportunity with cultural value also and above all for children arriving from other parts of Sardinia, from the rest of Italy and from foreign countries”.

This morning the soup was served in the primary school in via Nanni. Present for the occasion in addition to the deputy mayor, Maria Frisciataowner of Solaria, together with his son Matteo Fiorialso employed in the company, Giuseppina Pinohead teacher, Simonetta Fatherpresident of the Culture Commission, e Andrea Bertuccihead of the Municipality’s educational team.

The approval rating that emerged from the tests, with the children being the unquestionable judges, was very high. “The Gallura soup is a poor dish that was used to recycle stale bread” explained one of the school’s young students to his classmates.

“It was a nice novelty and the children enjoyed lunch – commented the teacher Lella Infante -. Before eating we told them about the characteristics of this extraordinary dish.”

The Department of Culture also looks at the traditions of the rest of the world and is planning “Couscous Day” for next October. The young pupils of the Olbia schools will taste the typical Maghreb dish.
