
L’AQUILA – In Abruzzo and Molise he was known for having exported Abruzzo cuisine to Japan, in Tokyo in particular he had made known the ventricina of the upper Vastese: he died due to an illness Joseph Sabatino, founder and owner, together with the chef David Fabianoof the award-winning ‘Trattoria dai Paesani’ in Tokyo, the temple of mountain and Abruzzo gastronomy in Japan.
Sabatino, who was 66 years old, had left Castelguidone (Chieti) many years ago and managed to win a long list of international awards and recognitions.
In 2019 the President of the Republic Sergio Mattarella he had named him a Knight of the Republic. In his restaurant over the years customers have been able to taste all the typical dishes of the upper Vastese area, all cooked on the spot, such as cheese balls and eggs and skewers or ‘rustell’.
